Southern Skillet Cornbread
Ingredients:
- 2 cups yellow cornmeal
- 1/2 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 3/4 cups buttermilk
- 1/4 cup bacon grease or melted butter
- 2 tablespoons bacon grease or vegetable oil for the skillet
Instructions:
- Preheat the oven to 425°F (220°C).
- Place a 10-inch cast-iron skillet in the oven with 2 tablespoons of bacon grease or oil to heat while the oven preheats.
- In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.
- In a separate bowl, whisk together the eggs, buttermilk, and 1/4 cup bacon grease or melted butter.
- Pour the wet ingredients into the dry ingredients and stir just until combined.
- Carefully remove the hot skillet from the oven and swirl the grease around the bottom and sides.
- Pour the batter into the hot skillet. It should sizzle immediately.
- Bake for 20–25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let the cornbread cool for 5 minutes before slicing.
- Serve warm with butter, honey, beans, greens, or your favorite Southern meal.
