Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery and cook for 5–7 minutes until softened. Add the garlic and cook for another minute.2. Add the chicken, chicken broth, thyme, poultry seasoning, black pepper, and salt. Bring to a boil, then reduce the heat, cover, and simmer for 25–30 minutes, until the chicken is tender and cooked through.3. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the broth and stir in the peas if using.4. To make the dumplings, whisk together the flour, baking powder, and salt. Add the milk and melted butter and stir just until a soft dough forms.5. Drop spoonfuls of the dumpling dough directly into the gently simmering broth, leaving a little space between them.6. Cover the pot and simmer for 15–18 minutes. Do not lift the lid during the first 12 minutes, allowing the dumplings to steam properly.7.
